In this YouTube episode of MICHELIN Presents: Green Star in Action, the A7 team ventures into the heart of Sweden to visit Knystaforsen—a MICHELIN Green Star and One Star restaurant housed in a former sawmill, nestled beside a rippling river and surrounded by pristine forest.
The team produced a full-length episode along with teaser content for Instagram, capturing the essence of this remarkable place.
Over the course of two unforgettable days, we immersed ourselves in the world of Chef Nicolai Tram and his family, documenting their inspiring story and deep-rooted commitment to sustainable gastronomy. At Knystaforsen, food is more than sustenance—it’s a soulful, elemental ritual. Chef Tram embraces the primal beauty of open-fire cooking, crafting bold, flavourful dishes with ingredients foraged, fished, and sourced from the surrounding nature and trusted local producers. His approach is intuitive, raw, and deeply connected to the landscape.
To truly do this story justice, Nicolai invited us to fully experience the Knystaforsen philosophy. From living with the family and sharing intimate conversations around the table to tasting their terroir-driven menu, we were welcomed not just as filmmakers, but as part of the family. This rare level of access allowed us to create a piece of content that authentically captures the spirit, warmth, and purpose of Knystaforsen.
At Knystaforsen, there’s only one rule: make yourself at home. And we couldn’t agree more—because that’s exactly how we felt.
